What Happened During The Inspection

The report noted several repeat violations, including missing license numbers, unsuitable food storage, and lack of certified food manager and employee training.

According to state records, the Florida Department of Business & Professional Regulation officials found five high-priority, six intermediate, and four basic violations at the food truck, usually located in Alachua County, FL (Although this inspection report suggested Marion County).

The high-priority violations included employees not washing hands between tasks. The inspector documented one worker who handled money and passed out food before putting on gloves to handle uncooked chicken, all without the minor inconvenience of handwashing. Ocho! Because apparently, hygiene is just a suggestion, not a requirement.

And the hits just kept on coming! Another employee decided that a quick glove swap was a sufficient substitute for soap and water after handling raw fish, proceeding to contaminate innocent bread with reckless abandon.

As if that wasn't enough, inspectors then discovered household pesticide in the establishment, raw eggs stored over tomatoes in the reach-in cooler, while, the butter and eggs were enjoying a spa day in the balmy temperatures of above 41 degrees – a veritable incubator for deliciousness (if you’re a bacteria, that is).

Meanwhile, intermediate violations showed that the handwashing situation continues to be a comedy of errors. The inspector documented that the sink was used for storage, lacked hot water, and had no sanitizer available for washing dishes.

Adding insult to injury, the food truck also had no certified food manager and couldn't provide proof of required state-approved employee training. A spray bottle with a degreaser wasn't labeled.

Basic violations included employee drinks without lids stored in the kitchen cooler, missing license numbers on the outside of the truck, unprotected to-go containers, and water leaking from a pipe near the three-compartment sink.

Some violations were marked as "corrected on-site" during the inspection, including moving tomatoes to the top shelf, removing items from the handwashing sink, turning on water, and purchasing bleach for sanitizing.

Gainesville is still getting a taste of Flavortown after Food Network star Guy Fieri's recent stops at some of the city's most popular local eateries.

Humble Wood Bagel Shop in the 4th Ave Food Park will be featured Friday night on Fieri's popular "Diners, Drive-Ins, and Dives" show on the Food Network. This follows an episode that featured Fehrenbacher's Meats & Eats just a few doors down at 307 SW Fourth Ave.

In an interview with The Sun, Humble Wood Bagel Shop owner Brett Ader and manager Tempra Arroyo said being a part of the process was a unique experience, but that setting it up wasn't an easy task.

Arroyo said Citizen Pictures emailed the bagel shop and reached out via phone a few times to let them know the eatery was being considered for the show. Fieri finally selected the shop after Arroyo sent in a list of ingredients and other information to the production team.

"I was honestly surprised because I've never seen the show before and that's the thing, is they're really focused on how things are made and ask like, 'what salt do you use,' 'is it sea salt or kosher' — it's literally down to the degree, Ader said.

Arroyo appeared on the show and said she sent six menu items formatted to the production team's liking multiple times, including for Ader's other restaurant, Humble Wood Fire Pizzeria.

"They originally reached out to the bagel shop and changed their minds and said they wanted to do the pizzeria," Arroyo said. "I did the process all over again for the pizzeria and they said never mind we're doing the bagel shop. So, I had to do double the amount of work but glad it worked out."

Ader said part of Fieri's reason for bringing the show to Gainesville was that his friend was hosting a party in Ocala.

Arroyo added that she was starstruck meeting Fieri and that she grew up watching the Food Network.

"I love Guy Fieri and have met a handful of Food Network stars and love the aspect of how the shows are made," Arroyo said. "I always wanted to meet him and was nervous, but he cares so much about the food and was very nice."

Ader said the filming started at 5:40 a.m. on a Saturday and began with an interview. Arroyo said the bagel shop prepared both versions of their lox bagel sandwiches, nova and carrot, and the mushroom muffuletta melt.

Fieri spent only two hours with management during the process and only during filming," Arroyo said.

"We spent a long time with the production team for two days, and I don't want to sound ungrateful, but kind of a bummer that we went right into it and didn't talk a lot of those things with him (Fieri)," Ader said.

Both said word spread quickly about the restaurant's upcoming appearance on the show.

"It's interesting, we had some people come by the pizzeria and said we saw that you guys are going to be on the show, to which I said, 'Oh no, it's at the bagel shop not here,' " Ader said. "They said, 'We know,' and they pulled out a bag of bagels from the shop."

Humble Wood Fire Bagel Shop will appear on "Diners, Drive-Ins, and Dives" April 4 at 9 p.m. The Paper Bag Deli, another Gainesville favorite, will be featured on the show April 11.

The Hutchinson Foundation held a groundbreaking ceremony on Tuesday in southeast Gainesville to mark the construction of a 22-unit affordable housing complex.

The groundbreaking is part of an affordable housing initiative in which the future apartment complex named Jessie's Village will be in the Gainesville Community Reinvestment Area (GCRA).

According to a city press release, "The Hutchinson Foundation is a locally owned nonprofit established by Kindrell Hutchinson, a Gainesville native whose work in property management and Alachua County Court Services fueled his passion for affordable housing solutions."

The apartments will be reserved for residents with household incomes no greater than 65% of the area median income (AMI) as defined by the U.S. Department of Housing and Urban Development (HUD) and adjusted for family size.

The ceremony Tuesday brought over a hundred people including the Hutchinson family and city leaders like Mayor Harvey Ward, Commissioners Desmond Duncan Walker, Cynthia Chestnut and Casey Willits, City Manager Cynthia Curry, and Alachua County Sheriff Chad Scott.

Hutchinson spoke to those in attendance about why he named "Jessie's Village" after his grandmother.

"I'm proud of the village that I come from, and I'm overwhelmed by the amount of Hutchinsons I see in the crowd right now. It shows we're literally ingrained in this community so if you don't know at least one Hutchinson, that's concerning," Hutchinson said jokingly.

Calling Jessie's Village his seventh child, Hutchinson elaborated that his grandmother was one of the matriarchs in the family and instilled core values like serving God, respecting each other and serving the community.

"Now this is a representation of what we are supposed to do as a community. We're supposed to work together to build and to continue to build to have something we're proud of. That's what building this is for," Hutchinson said.

Hutchinson thanked his family, the Gainesville Housing Authority, Greater Gainesville Chamber of Commerce and city officials for their partnership and cited that affordable housing is still a critical issue in the city. Hutchinson said one of his goals for Jessie' Village is to develop safe, clean and quality affordable housing.

"Now one of the things I've learned is if you have quality housing, you don't have to worry about those housing projects turning into the projects. It's a tough feat but I believe if we assemble the right teams, we can do it. As you can see, we've got a blank canvas to paint a beautiful picture," Hutchinson said.

Ward spoke briefly about how building Jessie's Village is a part of the city's strategic plan to create more affordable housing.

"We want a place that children can grow and are proud of it and their parents, grandparents, aunts and uncles can feel good raising those children there and hopefully those children can raise their children here. It's not about apartments, it's about more children growing in this community," Ward said.

The city allocated housing grants, including $280,000 from the American Rescue Plan Act (ARPA), $97,000 from the HOME Investment Partnerships Program, $87,700 from the ConnectFree Program to assist with the cost of utility connection and $47,000 from the Community Development Block Grant.

Duncan-Walker, the District 1 city commissioner, discussed how the Hutchinson family and her family have been friends for multiple generations. She said she's not surprised by the family's community help, and that she's thankful for their continued support to create what east Gainesville has been asking for for a while.

"We know the challenges that District 1 has faced from the beginning. We know affordable housing is right at the top of the list of the things we need. This is hallowed ground because to me it represents the transformation that not just what District 1 needs but what Gainesville needs," Duncan-Walker said.

Gainesville Senior Housing Strategist Corey Harris ended the ceremony by signifying that he hopes Jessie's Village will be the first of many affordable housing projects.

The harmful algae bloom, driven by Karenia brevis, has continued affecting Florida’s Gulf Coast. While concentrations peaked in early February, recent data from the Florida Fish and Wildlife Conservation Commission (FWC) confirmed that red tide was still present in multiple locations as of Feb. 26

Environmentalists have urged Gov. Ron DeSantis to declare a state of emergency due to the lasting ecological and economic damage.

At Northwest Seafood, a well-known Gainesville market, owner Lee Deaderick explained how red tide has forced them to seek alternatives to local seafood, increasing their costs and passing them onto customers.

“When red tide is present, it’s harder to source local seafood,” Deaderick said. “We have to look for alternatives and that drives prices up.”

Maintaining quality under these circumstances also requires tough choices.

“If we can’t get it fresh, we just won’t carry it,” Deaderick added. “We’d rather not sell it than compromise on quality.”

Seafood markets and restaurants in Gainesville rely heavily on fresh fish and shellfish from the Gulf Coast, but the red tide crisis has made sourcing those products significantly more difficult and expensive.

Mike Allen, a fisheries scientist at the University of Florida and director of the Nature Coast Biological Station in Cedar Key, explained that while red tide is a natural phenomenon, human factors are exacerbating the problem.

“Red tide is a natural occurrence,” said Allen, who has worked at UF for 25 years. “It's a type of phytoplankton in the dinoflagellate group, and when it blooms, it releases a toxin that can harm marine life and cause respiratory problems for people. While it's been happening for eons, human impacts like agricultural runoff can intensify the bloom.”

Allen also noted the role social media plays in amplifying the issue, particularly for tourism.

“If people see a picture of a dead fish on the beach, they might cancel their trips,” Allen said. “Even if the red tide would’ve cleared up by the time they arrived, hurting the economy.”

As the toxic algae spreads and intensifies in coastal waters, it also creates a ripple effect on local economies far beyond Southwest Florida. For Gainesville residents, the most immediate impact is felt through seafood prices, product shortages and disruptions to the food supply chain.

For restaurants, the challenge goes beyond just finding fresh products. Craig Lemieux, CEO of Rock N Roll Sushi, emphasized the need for flexibility.

“You have to be adaptable,” Lemieux said. “We stay in front of it by always having multiple sources. It allows us to not be dictated by the marketplace as much.”

Recent reports indicate that seafood wholesalers are still struggling with shortages, and in some cases, businesses have had to turn to imported seafood or frozen alternatives to meet demand.

Allen noted that the impact of red tide isn’t just about the current event — it’s part of a broader environmental issue that will require long-term solutions.

“The public needs to understand that red tide isn’t just a fleeting problem. It’s part of a much bigger issue with how we manage our land and water resources,” Allen said. “The more we can do to reduce nutrient pollution and protect coastal ecosystems, the better off we’ll all be.”
